A complete mini dairy installed by Priamo Food Technologies – Della Toffola Group at FICO Eataly World
FICO Eataly World is one of a kind. It is the largest food park in the world, dedicated to Italian food in all its facets. It occupies an area just outside Bologna and was officially opened at the end of last year.
In addition to dozens of restaurants and stalls selling typical produce, the FICO also has about forty laboratories where a great variety of foodstuffs are made. Their activities range from toasting and grinding coffee beans to producing all sorts of foods, pasta, rice, chocolate, grains, cold meats and dairy products. One of these laboratories is the Valsamoggia mini dairy - a separate, smaller version of the full-scale dairy on the outskirts of Bologna.
Valsamoggia chose Priamo Food Technologies to supply and install a miniature dairy dedicated almost exclusively to making its specialty - Squacquerone della Valsamoggia - a fresh, soft cheese made with cow’s milk with a characteristic creaminess and a flavor strongly reminiscent of fresh milk.
The mini dairy manufactured by Priamo Food Technologies was conceived and designed to handle up to 2000 liters of milk a day, with all the versatility needed to enable the complete, independent production of Squacquerone and numerous other cheeses too. The dairy comprises a tank for storing the milk on arrival, and one for storing whey, a multipurpose coagulation vat suitable for lifting, with a capacity of 500 liters, which is also used for pasteurizing, and a 500-liter cradle-type vat, plus drainage benches, trolleys and various other cheese-making equipment. All these elements are cleverly designed, manufactured and assembled so that people can see everything that goes on at the laboratory. The cheese-making plant is open to the public, and events and demonstrations are scheduled almost every day.
